Ingredients - Slow Cooked Beef Cheeks with Beef Organs Powder

  • 2 large grass-fed beef cheeks

  • 1 brown onion, diced

  • 2 carrots, diced

  • 2 celery stalks, diced

  • ½ leek, chopped

  • 8 mushrooms, quartered

  • 2 large potatoes, cubed

  • 1–1.5 L chicken or beef stock or bone broth

  • 1 Tbsp thyme (or fresh herbs like rosemary, sage, or oregano)

  • Salt and pepper, to taste

  • 1–1.5 Tbsp Cell Squared Organs Powder

  • Cell Squared Organic Ghee (for frying)

  • Fresh herbs, parsley or chives (for garnish)


Method - Slow Cooked Beef Cheeks with Beef Organs Powder

  1. Dice the onion, carrots, celery, and leek. Cube the potatoes and quarter the mushrooms.

  2. Heat a large frying pan over medium heat, add 1–2 Tbsp of Organic Ghee, and sauté the onion, carrot, celery, and leek for about 5 minutes until lightly golden. Transfer the veggies to a medium-large saucepan or Dutch oven.

  3. In the same pan, add another tablespoon of ghee and sear the beef cheeks on each side until browned.

  4. Add the beef cheeks to the saucepan with the veggies, then add the potatoes, mushrooms, thyme, broth, and a generous pinch of salt.

  5. Cover with a lid and bring to a gentle simmer. Cook on low heat for 4.5-5 hours, or until the beef cheeks are meltingly tender and falling apart.

  6. Just before serving, sprinkle the Organic Beef Organs Powder over the top and stir through gently for an extra dose of nutrients.

  7. Serve with cauliflower purée, rice, or mash, and top with fresh herbs.
