Ingredients - Grilled Lamb Skewers with Liver Powder
1kg lamb leg or shoulder, diced (it’s best if this is room temperature)
Juice of 2 lemons (just under ½ cup)
3-4 Tbsp olive or avocado oil
10-12 cloves of garlic, crushed
Fresh thyme
Salt and pepper to taste
Ghee for cooking
Stainless steel or bamboo skewers
ChimiChurri Ingredients
2-3 big handfuls of coriander
Juice of 1 lemon
1 garlic clove, crushed
½ cup olive oil
Cell Squared Sea Salt to taste
Method - Grilled Lamb Skewers with Liver Powder
If you’re using bamboo skewers, add them into a glass jar and cover with water to soak for a few minutes.
Add the diced lamb, lemon juice, crushed garlic, thyme, salt, pepper and beef liver powder into a bowl and mix to combine. Tip: Marinating the lamb in the fridge for at least 4 hours will allow the aromas to infuse the meat and give it the desired flavours.
To assemble the lamb kebab you can either use wooden or metal skewers. Thread the pieces of lamb onto the skewers evenly.
Heat a large frying pan, or you can cook these on the barbecue. Cook the lamb kebabs on all sides, for about 10-15 minutes, until cooked to your liking.
In the meantime, chop the coriander finely. Add it to a bowl along with the other chimichurri ingredients with salt to taste. Mix until combined.
When the skewers are cooked, serve them up and drizzle the chimichurri on top.
